goat cheese dip

Super easy and delicious. I recently made this for a demo at Central Market and people were wanting me to package and sell it to them. Here is a delicious, spicy, creamy, and tangy dip or spread. P.S use it on a toasted baguette with smoked salmon on top!

Ingredients

8 oz. Goat Cheese bar
3 tablespoons SALSA MAYA
2 tablespoons lemon zest
1/3 cup heavy cream
pinch of salt

Directions

Place all ingredients in a food processor until smooth.  Enjoy

ratatouille & goat cheese

Well here is a classic with a great twist. This is a dip that is so irrisistable. It is hot and spicy and delicious. If you have read most of the recipes on the page you will find they are very simple yet fantastic dishes. This dish is nutritious and also vegetarian, you can even make it vegan by using the spicy hummus recipe instead of putting the ratatouille over the goat cheese. With this recipe all you need is some crackers, toast or even just a spoon and enjoy!

5 T olive oil
1 medium eggplant, cut into small cubes
2 small yellow squash, cut into small cubes
2 medium onion, finely chopped
2 red peppers, seeded and cut into small squares
3-4 cloves of garlic
3 ripened tomatoes, cut in quarters
4 T SALSA MAYA
1 lb goat cheese

 

1. Beat the goat cheese and SALSA MAYA until well incorporated and add to a medium serving or cassorole dish
2. In a medium sauce pan add half of olive oil and sweat the onions and garlic together
3.  When they are almost tender add eggplant and cook for about 2 min. then add squash cook for about 2 min. and add the red peppers and continue to cook for another 2 min.
4. Add the tomatoes and the rest of the olive oil, season with salt and pepper
5. Pour the ratatouille on top of the SALSA MAYA and goat cheese mix and serve with baguette toast




lamb meatballs

Soo excited for this recipe. I made this a couple of times already and every time I fall in love with them more. They are great and you can even make them into patties for burgers. Honestly one of my favorite meatball recipes. You get all the flavors from the SALSA MAYA and then with the cinnamon and the grassiness (I don't know if that's a word)of the lamb its just beautiful. Also the yogurt sauce is super simple and can be saved for other dishes. 

Lamb Meatballs

4 lbs of ground lamb
1 egg
6 T SALSA MAYA
2 springs of cilantro, finely chopped
1 T mustard
1/4 t cinammon
1/4 t cumin
1 T salt and pepper

Yogurt Dipping Sauce

2 c greek yogurt
1/2 cucumber, cut into small pieces
2 T SALSA MAYA

1. Mix all ingredients for the meatballs and make round balls and put into a baking sheet
            -tip: put water on your hands to keep the meat mixture from sticking
2. You can cook the meat balls in the oven at 400* for 15 min. , or fry them; both are very tasty
3. Mix all ingredients for the dipping sauce and serve with the meatballs
4. Enjoy
 



white bean & kale salad

Here is a recipe so you don't get tired of your everyday salad... try this one. It is full of protein and deliciousness. What is great about a salad is that if you don't have an ingredient just substitute it. Be open to new and random ideas! This is a basic recipe that looks great for a dinner party and easy enough for a regular Tuesday.

 

White bean & Kale salad

2 cans of white beans
2 c. of kale, finely chopped
3 springs of cilantro, finely chopped
8-10 cherry tomatoes, sliced in half
1 small red onion, thinly sliced
1 cucumber, thinly sliced
Parmesan 

Dressing

6 T olive oil
4 T SALSA MAYA
2 t white wine vinegar

 

1. Slice, chop all ingredients and put them in a bowl
2. For the dressing whisk the vinegar and SALSA MAYA then slowly add the olive oil until it emulsifies completely.
3. Pour the dressing on the salad and make sure to mix and coat ingredients well.
4. Sprinkle the parmesan on top and Enjoy

pear & fig flatbread

This flatbread it one deliciously spicy flatbread! It is full of great flavor and it is spicy, sweet, salty and addicting; everything you would want. Pears and figs are in season during the fall, so if you want to make this during another season just switch for your favorite fruit from that season and you will still love it. This makes a great appetizer or meal!

1 box of puff pastry (comes with two pieces of pastry dough will make two flatbreads)
2 c goat cheese (cream cheese works too)
1/4 c.  SALSA MAYA
4-6 fresh figs, sliced in quarters
2 pears, thinly sliced
1/2 c. balsamic vinegar
2 c. fresh arugula

1. Preheat oven to 375* F
2. In a sheet tray put lay the 2 pieces of pastry dough and extend them
3. Mix the SALSA MAYA and goat cheese together and generously spread on the dough, leave 1 inch of the edge clean
4. In a sauce pan reduce the balsamic vinegar until it becomes a syrup about 5 min.
5. Slice the figs and pears and distribute them between the flatbreads
6. Put the flatbread in the oven for 20 minutes or until dough is golden
7. Drizzle the balsamic syrup and sprinkle salt and put the arugula evenly on the flatbread and enjoy!
